Sour Cream Potato Casserole

Ingredients:

1/2 cup finely-chopped onion
2 tbsps Island Farms butter
5 large potatoes, boiled...(or 5 cups cooked potatoes)
1/4 cup dry bread crumbs
1/2 cup grated cheese
2 eggs
1 cup Island Farms sour cream
salt & pepper to taste

Preparation:

  1. Sauté onions in butter until soft.
  2. Slice the cooked potatoes into a buttered (Or non-stick) casserole dish.
  3. Sprinkle onions, crumbs and 1/4 cup grated cheese over the potatoes.
  4. Beat together eggs, sour cream, and seasonings and pour over the potatoes.
  5. Sprinkle on the remaining 1/4 cup cheese.
  6. Bake in a 350° F oven until thoroughly heated through, and the cheese is melted and golden.
