New and improved Light Cream Cheese is available in both 250 and 500 g tubs. Look for it at your grocery store. Then try this delicious recipe for Crab Stuffed Mushroom Caps.
Crab Stuffed
Mushroom Caps
Ingredients:
12 large mushrooms
1 - 250g Island Farms
Light Cream Cheese
1/2 cup cooked crab meat
3 Tbsp Parmesan cheese
3 Tbsp Island Farms Butter
extra virgin olive oil
Remove mushroom stems and trim caps to accommodate crab mix. Thoroughly combine cream cheese, parmesan and crab. Pour 1/2 teaspoon olive oil into each cap and then add 1 tablespoon crab mix to each; place in foil container. Slice butter into cubes and add to bottom of container. Cover container with foil, bake at 350°F for 45 minutes. Switch oven to broil and remove foil during last 5 minutes of cooking time. Garnish with fresh parsley. Makes 12 servings.
